This is a great reference for pro and amateur cooks alike, who feel ready to break away from following recipes and to try coming up with their own. Aside from sharing stories from notable chefs about the inspiration for some of their recipes, the book also covers ideas on taste theory, and provides excellent lists of both classic and more surprisingly successful pairings of flavors and ingredients, and their peak seasons.

    Congratulations on winning a 2009 JB Award for THE FOOD BIBLE. Your books always offer such great insights I am certainly looking forward to reading it. I always go to CULINARY ARTISTRY for ideas, and reading BECOMING A CHEF while I was in culinary school really helped to prepare me for restaurant life. Keep up the great work!
